If you are growing your first mushroom, grow this one. Blue Oyster is the workhorse of the cultivation world: it colonizes fast enough to outcompete most contaminants, fruits on nearly any cellulose-based substrate, and produces heavy first flushes without careful coaxing.
The caps emerge a deep slate blue and fade toward silver-grey as they open, growing in dense shelved clusters. The flavor is mild and savory with a firm texture that holds up to high heat, which makes it a genuinely useful kitchen mushroom rather than just an easy one.
Blue Oyster is also the most cold-tolerant species in our range. It will fruit in an unheated garage or basement through winter, when warmer-loving species stall out completely.
