Brown Beech — sold in Japanese markets as Buna-shimeji — grows in dense clusters of small caps, marbled tan over slender white stems. It is a staple of East Asian cooking for good reason: the texture stays crisp through stir-frying and simmering, where softer mushrooms collapse.
Raw or undercooked it is unpleasantly bitter, and that bitterness is the whole point of cooking it properly. Give it five to seven minutes of real heat and the bitterness disappears entirely, replaced by a deep, sweet nuttiness that is unlike anything else in this range.
This is a patient grower's mushroom. Brown Beech colonizes more slowly than the oysters and benefits from a long consolidation period before fruiting — often several weeks after full colonization. Rush it and yields suffer. Wait it out and the flushes are dense and worth it.
