Chestnut mushrooms fruit in generous clusters of golden-amber caps, lightly scaled on top, over pale crunchy stems. The flavor genuinely earns the name — nutty and slightly sweet, more distinctive than a button mushroom and less assertive than a Shiitake.
The texture is the selling point. The stems stay crisp through cooking in a way few cultivated species manage, which makes Chestnut excellent in stir-fries, roasts, and anywhere you want the mushroom to still be there at the end.
It grows well on supplemented hardwood sawdust and rewards good fresh air exchange with tighter, better-colored clusters. Harvest the cluster whole while the caps are still slightly domed; once they flatten out and begin dropping spores the texture softens noticeably.
