Despite the name, Elm Oyster is not a true oyster at all — it sits in a different genus, and it behaves like it. The caps are thicker and firmer than a Pleurotus, the stems are stouter, and the whole mushroom holds together far better in storage and in the pan.
What makes it worth growing is its temperament. Elm Oyster shrugs off conditions that would deform a true oyster: it fruits acceptably in higher CO2, tolerates humidity dips, and does not stretch and go leggy nearly as readily. For growers working with an imperfect setup, it is the most reliable species in this list after Blue Oyster.
The flavor is mild and faintly sweet, less assertive than a Golden Oyster, with a firm bite that suits roasting and grilling.
