Golden Oyster fruits in tight bouquets of brilliant canary-yellow caps, thin and ruffled at the edges, often dozens to a cluster. It is one of the most photogenic species in cultivation and one of the most aromatic — growers routinely notice a rich, nutty, cashew-like smell well before harvest.
The flavor follows the aroma: nuttier and more assertive than a Blue Oyster, with a delicate texture that suits quick sautés better than long cooking. Cook it thoroughly; like all oysters it is best not eaten raw.
It shares the Pink Oyster's appetite for warmth and speed, though it tolerates a slightly wider band. The caps are thin and dry out quickly, so keep humidity steady through fruiting and harvest the cluster whole.
