King Oyster is the outlier of the genus. Where other oysters fruit in thin shelved clusters, this one produces a single thick, club-shaped stem with a small brown cap — and it is the stem you are growing it for. The texture is dense and uniform, closer to a scallop or a firm steak than to any other mushroom.
Sliced into rounds, scored, and seared in a hot pan, King Oyster is the standard plant-based scallop, and it holds its structure under heat far better than the softer oysters. The flavor is deeply savory and gets richer the harder you sear it.
It is the most demanding oyster to fruit well. King Oyster wants cooler temperatures, genuinely good fresh air exchange, and lower humidity than its cousins — starve it of air and you get long spindly stems with no caps. Get the conditions right and it is the most impressive thing you will grow.
